This is a favorite family Christmas cookie recipe. I thought some of you domestic types might enjoy it.


Grandma Rose's Forgotten Cookies

2 egg whites
2/3 cup sugar
1 teaspoon vanilla
Chocolate chips (about 1/3 bag)

Preheat oven to 350 F. Beat egg whites till frothy. Beat in sugar and vanilla until mixture is stiff- peaks should form (be patient- this may take awhile. I usually beat the bejeebers out of it for about ten minutes on high speed). Fold in chocolate chips. Drop on ungreased foil. Put in oven- put your foil on a cookie sheet and slide it off onto the oven rack (don't put them in on the cookie sheet, the heat won't distribute properly and they won't come out right)- and TURN OVEN OFF. Leave in for at least 6 hours (easiest done overnight). Do not open oven until morning! Some branches of our family also add walnuts in addition to or instead of chocolate chips. The stiffer the batter and the longer you leave them in the oven, the crispier they will be. You may also add a few drops of food coloring in order to make them festive. Done properly (egg whites are touchy things to work with!) the finished product will resemble a "kiss", and will melt in your mouth.
